I want to pretend this week’s I LOVE FOOD post is healthy for you, but it’s not. This week’s post is the tuna melt. I was first exposed to this melt my sophomore year in college, and I thought it was amazing.
I guess back in college it was the “healthier” option as my diet usually consisted of buffalo chicken calzones and chicken salad bagels.
The fact that melted cheese is the key factor in this recipe, makes it a leading contender for my favorite forgotten lunch meal. When I say “forgotten” I mean that when I go to make myself lunch, I usually forget that I can concoct a tuna melt. As soon as I realize that I have the ingredients to do so, I get extremely happy.
All you need is mayo, tuna, English muffins, and American cheese. There could be a variation of those ingredients as you could use light mayo, cheddar cheese instead of American, and add a tomato. You could even flavor-fy your tuna and shred some carrots and celery in it.
The picture I have supplied here is from Hoboken’s Gourmet Company. This is a cute little cafe in Hoboken, as the name suggests. This melt is on a toasted rye bread with tomato and American cheese. I actually crave this meal every time I go. Not only does this cafe have an Italian cafe feel, but they give such a big portion. I didn’t have room to include the homemade kettle-cooked potato chips that come with the melt.
