5 Easy, Delicious Super Bowl Approved Recipes

When it comes to Super Bowl food, you want something that’s not only delicious, but quick and easy to make, too. Let’s face it, no one wants to spend game time in the kitchen! Instead of ordering pizza or subs for the big game, impress your guests with these super easy, Super Bowl-approved recipes!

Chicken Parm Casserole

I stumbled across this recipe for chicken parmesan and OMG – it looks so good and so easy to make! Chicken parm is one of those dishes that’s kind of a pain to make; there are just too many dishes and pots and pans involved if you ask me. But this recipe involves one baking dish, no messy dipping and coating, virtually no clean-up, and is lower in calories and fat than the usual way you’d make it. It’s the perfect dish to whip up when you want to impress your guests, but not spend all day in the kitchen – just in time for Super Bowl Sunday!

Ingredients:
2 tbsp olive oil
2 cloves garlic, crushed
hot red pepper flakes, to taste
6 boneless skinless chicken breasts (I used 5, but they were huge!)
2 cups marinara sauce
1/4 cup chopped basil
8 oz mozzarella, shredded
4 oz Parmesan, grated
1 (5-oz) package garlic croutons

Crock-pot White Bean Turkey Chili

The crockpot is your best friend on busy days, when you’re throwing a party, or when you just don’t feel like making a mess in the kitchen. Chili is a must-have for the Super Bowl, and it’s easy to make when you throw it in a crock-pot! Just saute the ground turkey, garlic and onions in the morning, and add everything to the crock-pot to cook up into a delicious Super Bowl approved dinner!

1 lb. Lean Ground Turkey
2 Tbs.Olive Oil
2 Cloves Garlic, finely chopped
1 White Onion, diced
4 Cans Navy Beans (15 oz.)
1/4 cup fresh Jalapeno Pepper, diced
1 Tbs. Cumin
1 Tbs. Cinnamon
1/4 cup Sweet Corn
1 Cup Pinot Grigio (or your favorite white wine)
Vegetable broth
Oregano
Top with finely chopped Cilantro
+ If you like spicy add in a little chili powder and cayenne pepper 😉

Saute garlic. Add ground Turkey into the skillet. Cook on medium heat while breaking the meat up with a spatula. Remove from skillet and place in crock pot. Saute onion until it turns clear. Add to crock pot. Add in the rest of the ingredients.  Cook on low for 6 hours. (Recipe)

Skinny Spinach and Bacon Stuffed Mushrooms

Stuffed mushrooms may not sound like much of a Super Bowl necessity, but believe me, they are perfect for the big day – especially when their stuffed with bacon! You can make the stuffing the morning of the game, and half an hour before kick-off just stuff the little mushrooms and pop ’em in the oven. In half an hour you’ll have a healthy and delicious snack that’ll be gone in no time.

Ingredients:
14 oz (1 package) fresh mushrooms, stems separated
2 garlic cloves, sliced thin
4 cups fresh baby spinach
4 slices center cut bacon
1 tsp olive oil
1/4 cup Italian seasoned bread crumbs
2 tbsp shredded Parmesan cheese
cooking spray

Directions:
1. Preheat the oven to 400°F. Lightly spray a foil lined baking pan or baking dish with cooking spray.
2. Remove stems from mushrooms and mince fine. Sautee spinach 2 minutes until wilted; Remove from the pan, squeeze excess liquid and chop fine. Set aside. Cook bacon, drain off excess oil, and coarsly chop.
3. Season mushroom caps with salt. Fill mushrooms with spinach mixture, rounding tops off. Place on an oven safe dish and lightly spray the tops with oil.  
4. Bake 20 minutes or until golden. Makes about 11 medium sized mushrooms – double the recipe for a hungry crowd! (skinnytaste.com)

BBQ Chicken Pizza

Sure, you could order pizza or throw a frozen one in the oven, but where’s the fun in that? Impress your friends and make your own BBQ chicken pizza! It doesn’t get much easier than this – roll out some pizza dough (better tasting than the pre-cooked, packaged one), and cover with BBQ sauce, cheese and grilled chicken! But you might want to make two – this will be gone by halftime!

1 package Pillsbury Pizza Dough crust (or other pizza crust)
1 cup mozzarella cheese
1/2 – 1 cup BBQ sauce
3 pieces grilled chicken
1 small red onion

Directions
1. Preheat the oven to 400 degrees.
2. Roll out your pizza dough onto baking sheet. Cut grilled chicken into bite size pieces and toss in half of the bbq sauce.
3. Cover pizza dough with remaining bbq sauce to your preference, leaving about an inch of border around the the crust. Sprinkle with cheese,chicken and choppin onion, and throw it in the oven for 10-12 minutes or until cheese is melted! Enjoy!

Easy Grande Nachos

As far as I’m concerned, you can’t have a Super Bowl party without nachos, or some type of nacho cheese dip at least! These are super easy to make, require few ingredients, and the perfect snack for the big game. Serve with a side of salsa, guacamole, and whatever other toppings you have on hand!

  • 1 (10.75 ounce) can Campbell’s® Condensed Cheddar Cheese Soup
  • 1/2 cup Pace® Thick & Chunky Salsa
  • 1 pound ground beef
  • 1 small onion, chopped
  • 5 cups tortilla chips
  • 1 medium tomato, chopped
  • 1 jalapeno pepper, sliced (optional)

Directions

  1. Stir the soup and salsa in a 2-quart saucepan.
  2. Cook the beef and onion in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. Stir 1/2 cup soup mixture into the skillet. Cook until the beef mixture is hot and bubbling.
  3. Heat the remaining soup mixture over medium heat until it’s hot and bubbling.
  4. Place the chips onto a serving platter and top with the beef mixture. Spoon the soup mixture over the beef mixture. Top with the tomato and jalapeno pepper, if desired. (Allrecipes.com)
