If your a football fan, the last place you want to be during the big game is in the kitchen! But what’s a Super Bowl party without your favorite, creamy dips!? You need recipes that don’t require lots of ingredients or time, but are sure to please your friends…even if their football team isn’t! Ditch the expensive store bought junk, and bring out your inner Bobby Flay with these winning dips:
Guacamole – It’s a staple with tortilla chips and a winner at any Super Bowl party. With just 5 main ingredients, it’s easy to make and on the table before kick-off!
Ingredients:
2 avocados
1 small onion, finely chopped
1 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
pinch cilantro
salt and pepper to taste
Directions:
1. Cut a ripe avocado lengthwise, and remove the pit. Cut criss-cross slits through the avocado halves and scoop out with a spoon into a bowl. Stir in remaining ingredients, and top with salt and pepper to taste.
2. Chill for half an hour and serve with tortilla chips or other vegetables. (Allrecipes.com)
Roasted Garlic Hummus – It may not be a tradional game day dip, but it should be! Hummus is delicious anytime, anywhere, so why not whip up a batch to pleasantly surprise your guests, especially the vegetarians and vegans!
Ingredients:
2 cans chickpeas
1 head of garlic
2 T olive oil
2 T tahini
1/4 c reserved chickpea liquid
juice of 1 lemon
salt, pepper, paprika to taste
Directions:
1. Preheat oven to 375. Cut off the ends of garlic, but don’t peel them. Coat with 1 T of olive oil, and wrap in foil. Roast garlic for one hour.
2. Let garlic cool, peel and place in food processor with drained chickpeas and remaining ingredients. Blend evenly, adding reserved chickpea liquid until you get the desired consistancy. Add a sprinkle of paprika, and salt and pepper to taste. Serve with pita chips, bread, or vegetables.
Spinach & Artichoke Dip – Who doesn’t like a chip smothered in this warm, creamy dip? It’s a must-have for game day. This recipe is made healthier with light mayo and non fat greek yogurt, which also adds up to 23 grams of protein! Plus spinach, water chestnuts and artichokes make this one dip you can feel good digging into.
Ingredients:
1 cup light mayonnaise
1 cup nonfat greek yogurt
1 (1 ounce) package ranch-style dip mix
1 (14 ounce) can artichoke hearts, drained and chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) can sliced water chestnuts, drained and chopped
1/2 cup grated Parmesan cheese (optional)
Directions:
1. Blend mayo, yogurt and dip; mix together in a large bowl. Add artichoke hearts, spinach and water chestnuts; mix well. Cover and refrigerate until well chilled.
2. To serve hot: Stir in grated Parmesan cheese; microwave on high 4-5 minutes or until hot, stirring occasionally. Or serve cold with or without cheese!
3. Transfer dip to a bread bowl or serving dish, and serve with toasted bread cubes, crackers, or veggies.
Lowfat Buffalo Chicken Dip – Mmmm! This is one of the best low-fat, high protein dips EVER! It’s quick, easy, and no one will be able to tell it’s low-fat!
Ingredients:
2 cups diced or shredded chicken
2 Laughing Cow blue cheese wedges, or 1/4 cup crumbled blue cheese
1/4 cup fat free greek yogurt
1/4 cup fat free cream cheese
1/4 cup light mayonnaise
3 tbsp hot sauce
Directions:
1. Throw all the ingredients in a bowl, stir it up, and throw it in the microwave for one minute, stopping and stirring midway. Add more hot sauce if you like it hot!
2. Serve with tortilla chips, veggies or crackers
Warm Chicken Nacho Dip – Okay, it might not be the healthiest, but it’s definitely game day worthy. Sometimes you need a little Velveeta in your life, especially during the stress of the big game.
Ingredients:
1 (14 ounce) can diced tomatoes with green chile peppers, drained
1 (1 pound) Velveeta, cubed
2 large cooked skinless, boneless chicken breast halves, shredded
1/3 cup sour cream
1/4 cup diced green onion
1 1/2 tablespoons taco seasoning mix
2 tablespoons minced jalapeno pepper, or to taste (optional)
1 cup black beans, rinsed and drained
Directions:
1. Place the diced tomatoes, processed cheese, chicken meat, sour cream, green onion, taco seasoning, and jalapeno pepper into a slow cooker. Cook on High, stirring occasionally until the cheese has melted and the dip is hot, 1 to 2 hours. Stir in the black beans, and cook 15 more minutes to reheat.
Mexican 7-Layer Dip – You can’t have a Super Bowl party without nachos or 7-layer dip. We went for the latter because it’s easier to make, there’s less clean up, and most importantly, you never have to worry about naked chips! Every chip can get dunked in 7 layers of pure game day bliss.
1 (1 pound) lean ground beef
1 (16 ounce) can refried beans
1 (1.25 ounce) package taco seasoning mix
2 cups low-fat Mexican cheese blend
1 (16 ounce) container low-fat sour cream
1 (4.5 ounce) can chopped green chilies
1 tomato, diced
1 (6 ounce) can sliced black olives
1 bunch green onions, chopped
1 (11 ounce) jar salsa
tortilla chips or veggies
Directions:
1. In large skillet over medium heat, crumble and cook beef until browned. Stir in beans, chilies and taco seasoning mix. Spread beef mix into 7 x 11 serving dish. Top with sour cream then salsa. Sprinkle olives, tomato and onion on top. Cover with cheese. Serve immediately!
