Believe it or not, it’s the simple touches that lead to a 4-star meal – according to top chefs, that is! Here are 6 easy kitchen tricks and tips from top chefs that’ll make – or save – any dish!
1. Every now and then, even the best chef will overcook meat. Here’s a quick tip: Slice meat into thin strips, put it on a plate, and top with chopped tomato, onion, and jalapeƱo. Then add a drizzle of olive oil and fresh lime juice; the acid and oil will restore moisture and fat to the dried out meat!
2. Whenever you’re using a cutting board – and a sharp knife – always put a damp kitchen towel underneath the cutting board. This will keep the board from sliding around. Safety first!
3. Before you throw out wilting vegetables, try this trick first: Drop your aging produce into ice water before cooking or eating raw. Plants wilt due to water loss, so ice water penetrates their cells to restore crispness.
4. Sick of squeezing citrus fruit until your hands hurt? Heat lemons, limes, and oranges in the microwave for 15 seconds before squeezing them. The fruit will yield twice as much juice and it’ll be a lot easier, too!
5. Save the cooking water! The secret to a great pasta sauce is actually in the water you cook the pasta in. Save a cup of it before draining the pasta, and add it to the sauce as needed. The starch in it helps the sauce adhere to the pasta, creating a creamier, yummier bowl of pasta.
6. Let meat rest to keep the juices in tact. Wait 5 minutes before biting into burgers or grilled chicken, 7 minutes before cutting into steaks, and at least 15 minutes before carving a turkey or a larger roast.
7. Too much salt in your dish? Add a splash of vinegar to balance it out!
