Try this delicious vegan, gluten-free recipe for Pumpkin Chia Pudding!
1/2 cup chia seeds
2 cups almond milk
1 cup pumpkin puree (not pumpkin pie filling)
1 tsp nutmeg
1 tsp cinnamon
1/4 cup maple syrup or agave nectar (or stevia for less sugar content)
1 tsp vanilla extract
Directions
1. Blend all ingredients except chia seeds. Transfer to a large bowl and add chia seeds. Stir and let the chia seeds soak up the mixture in the fridge overnight.
