This week’s I LOVE FOOD post is once again Pinterest-inspired. If you still do not know what Pinterest is since our last visit, then you need to try it. That’s all I am going to say.
Anyway, I have recently become obsessed with zucchini. Since I am trying to diet (trying being the key word) I don’t eat potatoes anymore. Instead of reaching for a french fry, I want a healthy alternative.
Whenever you bread and fry zucchini; it is delicious. But, I saw this recipe on Pinterest the other day where the lady baked them. All she did was cut up about two zucchinis into little sticks of her choosing.
She set the oven to 450 degrees. She got a packet of Shake N Bake and added 1/2 C of grated parmesan cheese. She whisked an egg in a bowl, and dipped each of the zucchini sticks so that it was covered on all sides. The stick would go into the Shake N Bake bag. Once you do a little shaking it is time for the baking.
She took out the stick with a tong and place it on a greased cookie sheet, and repeated the process for each “fry.” Then put them in the oven for 12 minutes, turning them over seven minutes in. Pair it with a ranch dipping sauce and it is done.
Technically, next time I am going to make my own breadcrumbs to make this dish healthier. And, try to get a yogurt-based dressing. But, for a first week of diet kind of thing, it helped ease me into it!
