(PCM) This week’s I LOVE FOOD post puts the comfort in “comfort food.” I never understood pot roast. Using the literal definition, I get it that it is a roast that marinates and cooks in a pot.
Yet, when I was younger I couldn’t dissect what the stew-like mixture was. It is swimming in its own gravy, and falls apart as you go to pick it up with your fork. Almost like the tenderness of a chicken cacciatore, but Thanksgiving style.
This picture indicates that it is always important to have a well-balanced meal. As the image displays, it is good to incorporate a meat, carb, and vegetable into each dinner. Obviously a lean meat like chicken or fish is much better than red meat, but I do believe it is good to have red meat once in a blue moon. Or, beefy moon!
This meal was also accompanied by buttered noodles, which always goes well with the gravy. But, when we have mashed potatoes that is a major bonus.
There is so much to do with a biscuit, especially when potatoes are involved. Take the pot roast and mesh it in with the gravy and potatoes and stick it into the roll – that makes for one holiday sub that I am very thankful for! 😉
