Think you can’t drink piña coladas on a diet? Think again! With the help of the ultimate skinnygirl, Bethenny Frankel, you can have your summer cocktails without forgoing your diet! Here are a few of her favorite lightened-up summer cocktails that are perfect for Memorial Day and all summer long!
Skinnygirl Citrus Twist
Ingredients:
2 oz Skinnygirl Tangerine Vodka
1.5 oz lime soda water
½ lime
½ lemon
¼ grapefruit
1. Combine Skinnygirl Tangerine Vodka with soda water
2. Juice the lemon, lime, and grapefruit and add them to the mix. Pour over ice and serve.
Sangria
4 apples and 3 orange, slices
1 pound red grapes, halved
3 bottles light- to medium-bodied red wine
1 can Fresca (or any diet lemon soda)
1 can club soda.
Combine ingredients. Chill mixture, and serve over ice.
Mint Mojito
1 cup ice
6 lime wedges
1 1/2 tablespoon lime juice
2 tbsp torn fresh mint leaves
1/2 teaspoon warmed honey
2 ounces rum
4 ounces club soda
1. Muddle lime and mint with a pestle or a long spoon until well-bruised and fragrant.
2. Next combine honey, rum, and club soda; stir gently to dissolve honey. Add to muddled mixture; stir until mixture is well-chilled. Strain into a rocks glass filled with ice; garnish with mint and lime, if desired.
Light Piña Colada
8 ounces white rum
1/2 cup light coconut milk
1/2 pineapple juice
ice
1. Fill a blender halfway with ice, add white rum, light coconut milk, and pineapple juice; blend until smooth. Pour into 4 glasses, and garnish each with a pineapple slice. Each drink has only 169 calories—that’s 221 fewer than a classic piña colada!
