This week’s I LOVE FOOD post points to a perfect pair: Sausage and Broccoli Raube. These two items are great together, especially in this week’s featured picture.
This particular dish is sausage, broccoli raube, and pasta… orecchiette pasta to be exact. The sausage bits are tiny enough to provide the salty, meaty flavor without overpowering the meal.
The broccoli raube is definitely an acquired taste. It has a strong flavor, but usually is cooked tender enough to enjoy the texture. For those who have never had raube before, it is basically broccoli but longer and thinner. People, meaning Italian restaurants, usually cook the broccoli raube in olive oil and garlic to get it very tender.
Top the orecchiette pasta (which looks like little helmets) off with some parmesan cheese, and you are good to go.
So in the entire dish you have olive oil-tossed broccoli raube, sausage, and pasta. Fork please!
