Guilt-Free Eggnog Recipe

Regular eggnog is loaded with sugar and fat, and can have up to 400 calories per cup. But what are the holidays without a cup of eggnog? Seriously, it’s soooo good!

Instead of drinking the stuff out of the container, make your own, low-fat version of eggnog. It’s just as good, if not better, and all natural! With or without the booze, this recipe has less calories and fat than any eggnog you’ll find in stores, so you can enjoy a glass or two without feeling guilty. Plus it’s super easy to make!

Low-fat Eggnog:

6 cups skim milk

1 cup egg substitute

3 packets stevia (or other sugar substitute)

2 tbsp nonfat vanilla pudding mix

1/4 c bourbon or rum (or rum extract for non-alcoholic)

2 teaspoons real vanilla extract

1/2 tsp nutmeg

In a medium pot over medium heat, whisk together skim milk, egg substitute, pudding mix, and stevia over medium heat. Cook, stirring, 15 to 20 minutes, until thickened.

Remove from heat; whisk in vanilla, nutmegĀ and rum or extract. Let cool, stirring occasionally, 20 to 30 minutes. Refrigerate until chilled.

= approx 120 calories per cup (with alcohol)!
