(PCM) This week’s I LOVE FOOD post is nautical: the homemade lobster roll. Now, you are probably wondering why I say “homemade” lobster roll as opposed to just calling it like it is.
The thing is that these rolls are so expensive. You go to a joint that has them and they are usually 16 bucks a pop. You eat it within four bites, and you are down $20.
If you make them homemade they are not only fresh, but inexpensive. This is especially good when you have to feed large families.
My family ate with 10 people the other day. My mother and aunt went around the corner to Shoprite (to always save) and get fresh lobsters. You can order lobsters and ask them to boil them for you.
Make sure to save ample time for the lobsters to cool down before applying the ingredients. Otherwise your mayo will be melt-o. Once you have them cooled, you can start picking out the fresh lobster meat. You add all those tasty extras and stuff it into a potato roll. And, you have perfection my friends.
